Soups--Steamed Shark's Fin and Hen with Milk

Ingredients: 1 water-expanded shark's fin, ham slices, dried scallops, small cabbage hearts, rib, 1 hen, refined salt, gourmet powder, Shaoxing wine, fresh milk, chive ties, ginger

Recipe: cook the water-expanded shark's fin till it boils. Clean the big rib, old hen, chive ties and ginger. Put them in water and steam for 5 hours till well done. Take out and put in a tureen in turn. Add ham slices and dried scallops. Put milk, salt, gourmet powder and Shaoxing wine in the soup and bring to a boil. Pour the soup in the tureen and steam for 40 minutes. Take it out from the food steamer. Scald the cabbage hearts in high stock and put them in the tureen.
