Fish & Seafood Dishes--Braised Turtle with Rock Sugar

Ingredients: 1 soft-shelled turtle (about 600g), rock sugar, lard, Shaoxing wine, dark soy, chive ties, ginger shreds, stock, gourmet powder, watered starch, sesame oil

Recipe:

  1. Kill the turtle. Remove the bowels and clean. Cut into pieces and set aside.
  2. Make a little oil cross the heated wok. Put in turtle pieces, chive ties, ginger shreds, stock, Shaoxing wine, soy, rock sugar and gourmet powder. Braise for 30 minutes over an intermediate fire. Concentrate the gravy with a strong fire. Make a paste. Finally pour on some done oil. Remove and serve.
