Ingredients: 750g mandarin fish, green and red peppers, pine nuts, 20 spring roll sheets, salt, gourmet powder, sugar, pepper, ginger juice, chives, water chestnut powder, egg white, Shaoxing wine
Recipe:
- Shape spring roll sheets like cups. Fry in oil till golden. Grain the mandarin fish meat. Bleach with water and drain off water. Coat the fish meat with the mixture of salt, chives, ginger juice, gourmet powder, sugar, pepper, water chestnut powder and egg white. Knife the green and red peppers into pieces bigger than the mandarin fish shreds. Put pine nuts in hot oil and immediately take them out.
- Put fish meat in warm oil. When it is done, add green and red pepper shreds. Take out and drain off oil.
- Put oil, water, salt, gourmet powder, pepper and water chestnut powder in the wok and make a paste. Put the fish meat in and stir and mix them up. Fill the cups with fish meat. Dust on some pine nuts and serve.
