Fish & Seafood Dishes--Drunken Fresh Shrimps

Ingredients: 500g living big river shrimps, white sugar, sorghum wine, refined salt, prickly ash, dried orange peels, Shaoxing wine, light soy, gourmet powder, dried peppers, corianders, licorice roots, fennels, gingers, chives, preserved plums

Recipe:

  1. Put prickly ash, dried orange peels, red peppers, corianders, fennels, ginger shreds, chives and preserved plums in water. Bring to a boil over a weak fire. Add some refined salt, sugar, and light soy, gourmet powder. When it boils, let cool in a bowl. Remove the spices.
  2. Rinse the shrimps. Darin off water. Put them in a container; add sorghum wine and Shaoxing wine. Stir to mix them up. Put in seasonings and spices. Marinate for 24 with the container covered tightly. Take out and serve.
