Cold Dishes--Liquor-Soaked Chicken

Ingredients: 1 young chicken (about 1,500g), Shaoxing wine, refined salt, gourmet powder, prickly ash, ginger, distilled spirit

Recipe:

  1. Wash the chicken and scald it in boiling water for about half a minute. After cooling down, stew it on a weak fire for 15 minutes. Remove and let it cool down. Knife it into four quarters and coat them with little salt and distilled spirit. Pickle for about 2 hours.
  2. Saut¨¦ the prickly ash till the pleasant smell appears; add some refined salt and saut¨¦ together. After cooling, put in chicken soup, Shaoxing wine, gourmet powder, ginger and distilled spirit to make liquor gravy.
  3. Put the chicken chunks into the liquor to be pickled for 24 hours. After knifing them into bun shape, place them in a serving dish.
